Ingredients
The Filling
- 2 medium potatoes, peeled and cubed
- ½ cup crumbled feta cheese
- ¼ cup sour cream
- 1 egg yolk
- 1 tbsp chopped fresh parsley
- Salt & pepper to taste
The Pastry
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
Cook the Potatoes & Make the Filling
- Boil the potatoes in salted water until fork-tender (10–15 minutes).
- Drain and mash until smooth.
- In a bowl, mix the mashed potatoes, feta, sour cream, egg yolk, parsley, salt, and pepper.
Prepare the Pastry
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the pastry and cut into 9 equal squares.
Assemble Bourekas
- Place ~1 tbsp filling in the center of each square.
- Fold each into a triangle and pinch edges to seal.
- Place on the baking sheet.
Egg Wash & Bake
- Brush tops with beaten egg.
- Bake for 25–40 minutes until puffed and golden brown.
