Ingredients

For Pastrami Brisket

  • 1 whole kosher brisket, 8–10 lbs
  • ¼ cup black pepper
  • ¼ cup coriander
  • 2 tbsp garlic powder
  • 1 tbsp paprika
  • Mustard as binder
  • Hickory or oak wood chips

For Tacos

  • 12 soft corn tortillas (kosher certified)
  • Pickled red onions
  • Sliced pickles
  • Spicy mustard slaw (shredded cabbage + mustard + vinegar)

Instructions

  1. Rub brisket with mustard, then pepper, coriander, garlic powder, and paprika mix.
  2. Smoke at 225°F for 5–6 hours until tender (~195°F internal temp).
  3. Rest, slice thin, and chop into taco-sized pieces.
  4. Warm tortillas, load with brisket, top with pickles, pickled onions, and mustard slaw.
