Ingredients:

  • 3 dozen chicken wings
  • 12 ounces beer (Mexican lager or traditional IPA)
  • 2 tablespoons olive oil
  • 4 tablespoons mesquite or hickory seasoning

Instructions:

Wings Prep and Marinating

  1. Place wings in a large aluminum container.
  2. Pour beer and olive oil over the wings.
  3. Add the mesquite or hickory seasoning.
  4. Mix well to coat all the wings.
  5. Marinate for 4-6 hours or overnight.

Smoker

  1. Preheat smoker to 225°F (107°C).
  2. Drain wings from brine and arrange on the smoker.
  3. Smoke for 2-3 hours.
  4. Increase heat on the smoker to 375°F (190°C) and turn wings.
  5. Cook for 45 minutes to 1 hour until the wings are crispy.
  6. Remove wings from the smoker.

Serve hot with your favorite barbecue, wing, or hot sauce.
